I visited Ramsey Busan, which has been selected for the Michelin Guide for three consecutive years since 2024.

On the day of my visit, a special wine tasting event was hosted by the Louis Latour winery, and I was pleased to participate.

The dining room offers an unobstructed ocean view, creating a calm and inviting atmosphere throughout the evening.

The course began as the head chef personally came out to greet the guests.

For the amuse-bouche, premium sturgeon caviar was served directly on a wooden spoon to deliver clean salinity, paired with a delicate purée tartlet that offered both crisp texture and rich flavor.

The following finger food was a savory choux puff baked with Gruyère cheese, featuring a crisp crust and a smooth cheese cream filling inside.

The seasonal fish entrée showcased thin slices of fresh white fish rolled carefully, finished with sea algae crisps, fresh dill, and subtle herbs.

Soon after, Louis Latour Meursault Premier Cru was poured, raising anticipation for the upcoming courses.

The seafood course arrived with lobster and tender white fish. It was accompanied by two sauces: a deep bisque jus reduced from shellfish shells and a vibrant saffron butter emulsion, which balanced the natural sweetness of the seafood nicely.

Next, Corton Grand Cru Pinot Noir was served to pair with the meat dishes.

The crispy quail confit matched the aromatic Pinot Noir remarkably well, creating a very pleasing pairing.

During the meal, the representative of the winery explained the winemaking methods and harvest conditions across various vintages in clear detail, making the tasting even more engaging.

While we tasted five distinct wines, I was only able to photograph a few of them.

My favorite dish of the day was the signature Beef Wellington. The beef tenderloin was cooked to an even medium-rare inside crisp pastry, complementing both the rich demi-glace and velvety béarnaise sauce.

What surprised me most was the Petits Fours at the end of the meal. The delicate dessert quality has improved significantly compared to previous visits, easily standing among the best in Busan fine dining. Overall, it was a very satisfying dining experience from start to finish.

Here are two other fine dining restaurants worth visiting~
