I visited Palate Busan, which has proudly maintained its Michelin 1-star status for consecutive years. The restaurant previously operated in Yongho-dong with somewhat limited accessibility, so I was delighted to visit their new, spacious home on Dalmaji Hill in Haeundae.



Palate is recognized as an official Krug Ambassade, reflecting its high dedication to champagne and fine dining culture.

The interior is filled with soft natural daylight and expansive ocean views. Rather than relying on heavy artificial lighting, the gentle sunlight creates a remarkably comfortable and welcoming ambiance.



On the day of my visit, I experienced an exclusive collaboration dinner between Palate and Chef Yoo Yong-wook of Imok, complete with an exquisite wine pairing program.




The meal began with Krug Grande Cuvée 173ème Édition paired alongside an artistic amuse-bouche selection.




Inside the open kitchen, the team from Imok wore black uniforms while the resident Palate chefs wore white, creating a wonderful culinary harmony right before our eyes.

It was followed by an inventive monkfish taco that offered refreshing and creative flavor profiles.

Next, a white Burgundy, Les Champs de l’Abbaye Rully 2022, was served. Its bright citrus notes and crisp minerality formed an exceptional pairing with the tender Spanish mackerel dish.


Before the next course, we were poured a delicate Fixin Pinot Noir from Burgundy. As someone who truly appreciates subtle Pinot Noir, my anticipation for the paired dish was high.

The resulting duck steak, complemented by a silky and memorable carrot puree, left a lasting impression.

The highlight of the evening was the signature smoked beef rib. Cooked using authentic Texas low-and-slow indirect smoking combined with reverse searing, this dish required sixteen hours of total preparation starting early in the day. Chef Yoo Yong-wook personally visited the table to introduce the cooking process.


To accompany the beef rib, a bold Xavier Copel Pauillac 2016 Bordeaux red wine was poured.

The beef rib featured a pleasantly crispy exterior, while the inside remained incredibly moist, tender, and rich with savory juices. The exceptional culinary standard was evident in every single bite.

The main meal proceeded at a relaxed, comfortable tempo, allowing us to savor each dish thoroughly.

Following the beef, a creative fine dining interpretation of Busan gukbap was presented, featuring delicately smoked ham in a flavorful broth.

For dessert, an elegantly plated ice cream delivered a balanced sweet and tangy finish.

We concluded this remarkable journey with artisanal petit fours accompanied by fragrant tea. Although Busan is home to three Michelin 1-star venues, Palate has never once disappointed across my four visits. I personally believe this dining destination holds the culinary caliber worthy of two stars, and I warmly recommend it to anyone passionate about exceptional gastronomy.
