Since it was summer, I really wanted to eat cold raw fish soup (Mulhoe).
I kept seeing this place on Busan Instagram Reels lately, so I decided to visit.
Established in 2012, this Dongchon Mulhoe Busan spot is famous for being the first restaurant to develop adding noodles (sari) to Mulhoe, which got me really excited!

The interior was quite spacious.
We arrived right before break time, so we were able to get seated right away without any waiting.

The menu is mainly divided into cold raw fish soup (Mulhoe) and flounder seaweed soup (Gajami Miyeok-guk). Since it was my first time visiting, I ordered the classic Mulhoe.

The meal came out with cold raw fish, slushy broth, noodles, seaweed soup, a bowl of rice, and various side dishes. Everything looked incredibly clean and neat.

The icy slush broth is served separately, so you can pour as much as you like over the fish and vegetables.

Ta-da! You can immediately tell just by looking at it that only the freshest ingredients were used.

They advised eating the rice with the fish first, and then mixing the thin noodles (sari) in at the very end. The accompanying seaweed soup was also deeply flavorful.

The icy slush texture stayed frozen until the very last bite, allowing me to enjoy a refreshingly cold meal all the way through.

Mulhoe is a uniquely Korean food culture where you pour a generous amount of icy, gochujang-based broth over fresh raw fish and mix it with rice or noodles.

While it might remind some of Ceviche, Mulhoe offers a completely distinct flavor profile thanks to its rich Korean seasoning base. I don’t think I’ve ever tasted anything quite like this anywhere else in the world.
