Currently, the hottest dessert trend in Busan is anything featuring mochi! Among them, the Soufflé Mochi here at Unbent Coffee has been wildly popular, so I went to try it myself.

Honestly, it was the best dessert I’ve had recently. Their signature menu features an incredible combination of ultra-fluffy, melt-in-your-mouth soufflé pancakes, slightly bitter matcha powder, and sweet maple syrup.

Located just a short walk from Gwangalli Beach, it’s definitely a must-visit if you are nearby!

The interior was a bit dark, so I thought it was closed at first. I heard other visitors often make the same mistake!

The interior features achromatic paint tones and exposed concrete, beautifully accented with potted plants dotted throughout the space. It creates a truly unique and distinct atmosphere.

Although it looked dark from the outside, the inside is bright, clean, and pleasant.

When you order, they will give you a table number like in the photo, and they bring the food directly to your table when ready. Please note that the soufflé pancakes are made fresh to order and take about 20–30 minutes.

It was surprisingly busy for a weekday afternoon! Even though there was plenty of seating available, every single table was completely full, and new customers kept coming in nonstop.

Perhaps because of that, there was a bit of a wait, and the orders were slightly backed up.

After waiting about 20 minutes, our order arrived! This is the Matcha Soufflé Pancake. I actually came for the mochi version, but I felt like I had to try the original signature menu first. For the drink, I had the Peach Blossom Tea—its sweet aroma paired amazingly well with the matcha soufflé.

One bite in, and both my friend and I couldn’t stop raving about how delicious it was! In Korea, there’s a popular slang phrase, “맛없없” (pronounced mat-eob-eob, short for “it’s impossible not to be delicious”), and that was the absolute perfect description for this.

We devoured it so fast that these are the only photos I managed to take! The cafe is filled with plants, which makes the air feel super fresh. It’s actually much more spacious with higher ceilings and has plenty of seating than it looks from the outside.

This place is genuinely amazing, so I highly recommend checking it out!
The next flavors I’m planning to try are likely the Banana Mochi Soufflé, Cremebrule, and Dubai Mochi Soufflé.
